Sauteed Cauliflower Recipe

With our first CSA pickup, we received a head of cauliflower and this is what my husband made with it.

Source: Joy of Cooking

1 small head of cauliflower (1 1/4 pounds) cut into florets
3 tablespoons olive oil
2 cloves garlic, slivered
1/4 teaspoon red pepper flakes
grated parmesan cheese to taste (I think my husband used just under an ounce.)

Heat in a large skillet over medium heat the olive oil and garlic, until the garlic just begins to color. Add the cauliflower along with the red pepper flakes. Increase the heat to high and saute until the cauliflower begins to brown in places, about 6 minutes. Toss with cheese. Serve. (Can be served with lemon wedges and you can add some salt and parsley with the cheese. The original recipe said to add salt and parsley with cheese, but we did not.)

This was actually a very good side dish.
